Lemon and Garlic Kale

Many of you have already seen my audition for the Oprah Winfrey Network, in which I prepare this dish in just minutes!  So I thought I would share the wonderful Kale dish to try for yourselves!  This recipe makes a great side dish or add in beans, fresh pears, feta cheese or whatever else sounds good to make it a hearty entree.  A most versatile and healthy dish!

1 bunch of Kale

½ cup water

3 cloves of garlic sliced thin

salt and pepper

2 tablespoons of olive oil

juice and zest of ½ of a lemon

Thoroughly wash the kale leaves and rip into small pieces.  Set inside a colander over a plate.  In a large pan sauté the garlic cloves for about a minute.  Transfer the wet kale leaves and set heat to medium.  Add the ½ cup of water and sauté gently until limp.  Transfer to a large bowl.  Add salt and pepper to taste, olive oil, lemon juice and zest.  Toss and Serve.
