Chicken Stirfry with Honey Ginger Soy Glaze

Just the thing for a fall dinner.

Chicken Stirfry with honey ginger soy glaze

2 tablespoons of canola oil

1 onion

1 stalk fresh broccoli

1 red pepper

1 yellow pepper

1 package of chicken tenders

2 inches piece of fresh ginger, peeling and grated (use a microplane)

1/3 cup of soy sauce

¼ cup of honey

Saute onion in canola oil until soft but not brown

Add in broccoli, red and yellow pepper

Cook until just softened to your liking – I like al dente

Toss in half of the grated ginger and half of the soy sauce and stir to combine

Move veggies to serving bowl and cover with foil

In the same sauté pan add the chicken tenders and cook, turning until lightly browned on both sides.

Stir in remaining ginger, soy and the honey.

Combine in serving bowl with veggies and serve!  Great with rice.
