Twix Pie
Shortly After Halloween I entered the local bake off contest. I decided to enter all four of the categories: cakes, cookies, pies and miscellaneous. I had been working on a chocolate cake for some time so I knew I would go with that as my cake submission. For the miscellaneous category I entered my Aunts age old recipe for Stained Glass Windows, a sinful combination of chocolate and marshmallows. I submitted another family recipe as well, my brother-in-laws Great Aunt Bea’s Rugula for the cookie category since I make those all the time. My usual pies include fruit, especially rhubarb which I proudly grow in my garden each summer. But even my frozen stash was gone by mid-November. So I was stumped on the pie category…what to make, what to make? Well as I strolled down Main Street for our annual Halloween stroll I hoarded as many twix bars as I could, since it’s my favorite Halloween candy. I thought to myself, “what if I could recreate the amazing flavors and textures of my favorite candy in a pie?” That’s where the idea was born. I used one of my favorite shortbread recipes for the crust to mimmick the cookie part of the candy. I made caramel – not an easy task – for the middle part and topped it with a chocolate ganache. I was surprised it did not win first place, but now you can be the judge and let me know if you think it’s a winner. It’s very sweet but I do think it hits the mark! Enjoy!
