Crab Stuffed Mushrooms
All my recipes are kid approved, so if your kids are inclined towards seafood they may like this one!
Crab Stuffed Mushrooms
4 Portabella Mushrooms
1 Tablespoon of Olive Oil
1 6oz can of Lump Crabmeat or 6 oz of fresh Crabmeat
1/2 cup of Panko Bread Crumbs
2 Celery Stalks – finely diced
1/4 teaspoon Worchestershire Sauce
1/4 teaspoon of fresh Cracked Pepper
1/4 teaspoon Salt
1/2 teaspoon Dijon Mustard
Juice of half a Lemon
1/4 cup of Mayonaise
2 tablespoons of Fresh Chopped Parsley (optional)
1. Preheat oven to 400 degrees. Scape out the gills inside the mushrooms. Place open side down on a baking sheet and rub the mushrooms with olive oil.
2. Bake mushrooms for 15 minutes.
3. In a large mixing bowl combine remaining ingredients.
4. Remove mushrooms from oven, turn over and fill with crab mixture.
5. Return stuffed mushrooms to oven and bake an additional 15 minutes or until golden brown. Sprinkle with parsley if desired. Serve Hot.
